Pause. Breathe. Refresh.

Our first summer guests just left. We ended the visit with a lazy morning on the deck, drinking lattes while enjoying a fresh fruit salad and my popular ham, cheese, and zucchini muffins.

As I shut down my blog for the next two months, I thought I would gift you this recipe, muffins I have been making for over twenty-five years. They are tasty and easy to make. Hopefully, when you make them, they will be a reminder to join me in September to continue our journey rowing north. Happy summer!

Ham, Cheese, and Zucchini Muffins

2 cups flour

3/4 tsp salt

2 tsp baking powder

3 tbsp sugar

4 tbsp cold butter

1 cup shredded zucchini

3/4 cup milk

1 egg

1 cup grated cheddar cheese

1 cup chopped ham

Mix flour, salt, baking powder, and sugar. Cut in cold butter. Add remixing ingredients. Mix lightly.

Bake for 20 minutes at 400°. Makes 12 muffins
